My favorite recipes this week

honey-garlic-eggplant-5w-150x150Cruising around my favorite blogs finding new recipes to try is one of my favorite things to do.  There are so many awesome, free recipes out there!  I know I like it when the blogs I read share recipes they’ve tried and loved–it gives me new ideas for my meals for the week.  So, here’s some of my favorite new meals I’ve made recently!

For breakfast I’ve been on an oatmeal kick again recently.  I’ve made both of these from The Oatmeal Artist multiple times this week.  They’re good.  And filling.  And I put chocolate chips in both of them.  Yum.

Pumpkin Oatcakes. I just used choc chips instead of white choc + macadamia nuts.

pumpkin-white-chocolate-macadamia-oatcakes-1Salted PB + Chocolate Chip Baked Oatmeal.  Like a warm oatmeal cookie for breakfast.  Makes my apartment smell awesome.

salted-pb-and-choc-chip-baked-oatmeal-4-These Crock Pot Balsamic Beef Sandwiches from Iowa Girl Eats.  Threw together everything in the crock pot when I got back from the gym Friday morning and the beef was falling apart tender when I got home from work.  These are definitely going to be repeated.

Pumpkin bacon grits with poached eggs.  I like all of those things.

Crock pot sweet potato lentils.  We all know about my thing for sweet potatoes.

Pumpkin gelato with candied ginger and dark chocolate.  Ok I’m not actually going to make this because I (luckily) don’t own an ice cream maker (or I would gain about 50 pounds) but I’ve been practically drooling just looking at it.

  1. I meant to comment on this post approximately 3 months ago when I first saw it but have spent all my free time on a plane – wifi withdrawal.

    1. The pumpkin bacon grits are awesome. Make them and put feta cheese on top. Also good with sautéed greens and peppers. But never leave out the cheese.

    2. The coconut crusted fish nuggets (I know that sounds gross) from All Day I Dream About Food and also the pineapple, jalapeño, and feta BBQ pizza from Cookie And Kate are recent favorites of mine.
